Nebunie-n farfurie.

Sa zicem ca sunt mai clasica, I like it simple 🙂

-100 gr caju crude;

-100 gr migdale crude;

-o lingura de fulgi de cocos;

-12 curmale.

Crema de banane+caju :

-100 gr caju hidratate peste noapte (sau macar 4 ore);

-2 banane.

-100 gr caju hidratate.

-1 banana.

-10 curmale.

-o lingura de pudra de cacao bio.

Crema de mure:

-100 gr caju hidratate;

-150 gr mure;

-8 curmale.

Food madness.

First tought that crosses my mind when I think about the last cake I prepared.

I gave up on sugar since April (btw, why does the time fly by so quickly?) and I tried a lot of sweets recipes, but nothing compares with a cake and all the crazy combinations I tried so I can find the flavours I really love.

I finally bought a smaller springform pan, so I don’t lose it with the quantity. You can try Dedeman or IKEA to find a similar one.

Let me tell you that I’m not good at baking pastries/cookies, especially if it involves a dificult recipe. Maybe I’m passioned about a lot of things, but this is not the one I discovered yet.  Let’s just say I’m a classic,  I like it simple 🙂

If you are like me, then you will love to prepare this cake. Even if it doesn’t have sugar and there is no baking going on, it’s super D E L I C I O U S.

What will you need?

Crust:

-100 gr raw cajou;

-100 gr raw almonds;

-1 tsp coconut flakes;

-12 dates.

First layer (banana+ cajou):

-100 gr overnight hydrated cajou (or at least 4 hours);

-2 bananas.

Between layers you can choose whatever fruits you like. I used apricot and blackberries.

Second layer (cocoa):

-100 gr overnight hydrated cajou;

-1 banana.

-10 dates.

-1 tbs cocoa powder.

Third layer (blackberries):

-100 gr overnight hydrated cajou;

-150 gr blackberries;

-8 dates.

To prepare the crust, you have to process all the mentioned ingredients in a blender or food processor until everything sticks well together .Cover the springform pan with baking paper and press the dough. You can use a glass or other kind of small plate to press it.

Layer the fruits as you like. I used slices of apricot and blueberries.

For every layer, blend all ingredients, until completely smooth. Spread them over the crust, using a silicone spatula to make sure the layer is spread evenly.

Let the cake freeze for at least 4 hours. When serving, let it defrost for a while and decorate it as you like. I used small pieces of almonds and blackberries.

I recorded all process, so it can be easier for you to understand. Find it below 🙂

I admit it’s been a rough period lately, since I gave up on sugar. I used to eat sweets almost every day, especially if I found myself in a difficult situation. I thought it helped me more. You know the American movies when women felt heart broken and used to eat an ice cream bucket to forget about everything? Well, don’t try this at home :)). But, do try this cake recipe, because you will not regret it as if you did ate an ice cream bucket.

If you have any question or advice, please write me in the comments section. I would love to hear your thoughts. 🙂

Kisses, G.
